Cornichons or baby gherkins are very small crisp pickles made from tiny cucumbers. They are very firm with a fresh crisp taste. Their small size makes them ideal for platters and other snacking occasions, where a different shape and taste is welcome. They can be used in cooking and other recipes in the same way as normal gherkins.
